Even though I "designed" this to have a cord wrapped handle from the beginning, I am starting to feel that is only cheating myself in this early learning phase, so will be making a wooden handle.

A cord wrap isn't cheating. It takes me 3x longer to do a nice wrap than it does for me to make a micarta or G10 handle. Your knife would look good with a Japanese style wrap.
