Finally got this one done !! All customer specs.

Steel: 440C Peters rc 60
Handle: Cocobola bolsters - Curly Maple and SS spacers - Spalted Black Walnut

Chef's = 7.25" Blade
Boning = 6" Blade
Paring = 3.25" Blade

I don't know why no ones commented on this. A handsome set. I'm thinking you'll oil the handles. Flat grind blades of 440C is a real up grade for kitchen knives. Should make anyone proud to have them in there home. DM
 
I really Thank you Mr. Martin for your kind words. I did put 7 coats of Danish Oil on them over 7 days and then Ren waxed them. She (the customer) didn't want a high sheen
to them but still wanted the wood to stand out. I delivered them tonight and she was very happy. We tested a lot of food items from deboning a chicken to slicing over ripe tomatoes.
We were both very happy with the results.

The Danish oil didn't darken them at all like Tougue oil or boiled linseed oil would. I'm sure you went over dishwasher precautions for that wood. Still, a nicely done 3 knife set. DM
