In 1095, I would consider 375°F a bit low for any knife but a kitchen knife. I use 400-425°F most of the time with excellent results. With 1095 you have to trade a little hardness to get a good bit more toughness.

My understanding of the question (which got moved from GKD) was not that he was doing the heat treatment, but for some reason exposing a finished knife to 375 degrees and wondering if it would affect the temper that's already in place.
