I have been getting a few of the MTech knives from the local knifeshop. I noticed they all use 440 steel but they do not have the letter at the end. I was wondering what the difference is between 440 A,B,C....ect?

The answer to your question about the 440 stamp is: generally if the stamp doesn't say "C" after the 440 it's likely "A". The reasoning being if a manufacturer had used 440C he'd want that known.
 
Don't forget that sometimes 440 means 420 or some other type of "surgical steel." I think Kyui Su Kims' question is legit. You really don't know what it is until you find the alloy content. This is very common with cheap knife companies or companies that use a very low grade steel.
