I have a question to pose. I recently traded for a Wegner made by Phil Boguszewski. The steel is 440V. Now what I want to know is this, is that the same as CPM440V or is this something a little different? If this is a CPM steel I understand that they are tough to sharpen when completely dull. I usually sharpen 10 to 20 strokes on my Sharpmaker, white stones, every night if I have used it during the day. This seems to keep the edge very keen. Does anyone else do it this way? Thanks in advance!

Your knife is made of CPM440V.

Most people with CPM steel knives sharpen them infrequently. Daily sharpening would seem to me to be only necessary with extremely severe use. Have you tried a steel?
