How does 52100 compare to D2 or other steels of similar cost, like S30V, A2, etc.? The knife I want is 52100 with a convex edge made by Marbles, it's either that or a Dozier (D2) with convex edge. Bark River also makes a good looking one that is A2, convex. I know it (52100) is not stainless but how is it for holding an edge and/or sharpening?
