Hello everyone! I just finished boxing up this knife for shipping to the client. He requested a specific profile, essentially what I call a Euro Santoku as it is a full tang knife with a left hand "D" handle, for a left hand user, obviously. The steel is 0.075" AEBL at 63HRC and the handle is a stunning piece of stabilized curly golden acacia, provided by Ben Greenburg, a dealer here on Bladeforums. The spine is rounded and polished, and the knife is as light as a feather. The grind is a full flat with slight convex, down to a zero edge that was backed off just enough to reflect light. The edge is 9° per side, done on Shapton Pro 320, Shapton Pro 1000, Green Brick 2000, Shapton glass 3000, and stropped on 4 micron CBN leather. It is "stupid sharp". My photo room is in a bit of shambles at the moment, so I took my lightbox in the garage under the LED shoplights to get some very quick photos done, so I apologize for the quality.
