805 Signature Series

I'm just curious to know if anyone has used their 805 much, or if anyone has used an 805 in the kitchen. Anyone know if the walnut handles hold up to daily washings?
 
I used one back just before thanksgiving, quartering up a whitetail and then in the processing part. It never went dull. Walnut handles held up for that little bit just fine. But didn't run it through the dishwasher. That one I hand washed.

I used it some and the son in law used it some. We both liked it for peeling out the backstrap and quartering. The walnut grips worked good.
No slipping around in the hand. Sorry guys,,didn't get any pics of the 805 in use.

I still liked the tad longer 121 for reaching in and cutting loose the hams, but that half inch difference over the 805 didn't really matter all that much.
 
I hope to have one for use someday, but for now I'll have to settle on your input as it gets used in the kitchen!

Well, I found an 805 at a reasonable price and bought it. My mother has been complaining that she needs a nice kitchen knife. Once she starts using it, I'm sure she'll keep me posted about how it performs. She has a bunch of Ernest Warthers knives from the 1960s that I like, but I'm guessing she'll love that S30V

Woah...leaving an 805 for your mom....way cool. :thumbup:

All I left my mom is a handfull of 470 mentors and she loves those. Specially when I swap out her dull ones with some sharp ones. Which reminds me,,,I better get sharpening on the ones I have.

I probably should have gone ahead and sucked it up and used one of the 805's a couple years ago, when I kept procrastinating about it, instead of that er, 122, yeah, thats right,,,a 122....:rolleyes:;)

I would be glad to buy...but won't make it out there then. Hopefully a bit later on or into the Jan doe/spike season. If you are still around,,,we can compare our 12222s....:rolleyes::D
 
I went to my folks house today for dinner. My Mom raved about her 805, and kept glaring at my Dad and hitting him with, "I don't know why it took until I was this age, to get a decent knife in the kitchen" :D
