I wonder how 80crv2 steel stack up against CPM3V when it come to edge holding and toughness?

I know theoretically 3V should be a superior steel since its just a more high tech stuff but my mind have change since I have done numerous cutting tests on Spyderco Military S30V against a hand-forged blade made from Bohler's R100 bearing steel(52100)
I quit surprise that R100 out perform S30V by significant margin in every test I did by which are robe cutting, cardboard cutting, and wood craving.

This should tell you what to expect:

When making comparisons, make sure it is apples to apples. S30V and 52100 are not the same fruit. Without the actual HT specs, they could be very different final blades. 52100 at RC62 will out cut rope against S30V at Rc58. The tests you listed are oly cutting tests, there are other parameters dealing with edge duration, toughness, corrosion resistance, etc.

Here is 52100 and S30V:
