8cr13mov chipping

Does 8cr13mov tend to chip easily or am I ok the not have to worry about it?

You don't have to worry. It def does not chip easily. It's actually a very decent steel in my opinion.

It's more likely to roll than chip, especially if you go under 30° included on the edge angle. It works very well with a 40° microbevel.
