its Dykem Layout die. I scribe the profile in and I get much more precise repetition in cutting and cleaning up profiles. Also it helps me grind because it gives a great easy to read color transition between ground bevels and untouched flats. You can see where I marked my pin locations also. Just much more precise layout lines.

How big is the chopper and the kitchen knife for your sister? I scaled up a small chopper today and was going to contour the handles, but I got sidetracked on a new work rest.

The chopper has a 8" blade and the Chefs knife has a 7" blade. I wasn't in the mood to grind down 8" of 7/32" stock but we made it through it :) untill heat treat anyways :)
 
Big knives take time, don't they? I like those sizes and I bet your sister loves her Christmas present!
 
Yeah. Can't really rush em but then again can't rush the small ones either :)

Hope the chefs knide turns out well :)
