a cooks pocket knife?

ok so alot of cooks know that the best feeling knife when cutting on a cutting board or other flat surface knows that the blade is a bit more than finger thick down passed the blade.

are there any folding knifes that have this? i know it would be really hard to make a mechanism for one, or even a handle, but just as a general, nonshalant question, are there any folding kitchen knives.

dont get me wrong, the military and pm2 are great for kitchen duties, with all that belly and pretty good length. they lack the ability to do tap cutting and cross cutting (i cant remember what i mean to say, where you hold the back of the knife on the board and rock it to cut stuff. )
if your good you can make it work, with the right grip ofc... but just a friendly question, as i havent been able to find any,


and i also know a kitchen knife is meant to stay in the kitchen.... im a bit drunk =P
