I just received 2 Old Hickory knives and a couple others from my Grandmother, who turned 90 earlier this month, who now has help to come in prepare meals and clean. She has “no use for them anymore” gave them to me and told me to “do something with them”.

I’m really liking the 8” chefs knife it’s got a great feel in hand.
The top knife in looks like some sort of skinner style or perhaps a butchers knife that got turned into what it is today.
Anyway when I get around to it I’m gonna give them the same treatment I did in this thread:

I’m not so sure with the skinner, I may have to photoshop a few reprofile lines to see if anything jumps out at me.

My turn to Rehandle some Old Hickory knives DONE !
I’ve been sitting on this project for a couple years and now it’s time. Here is my starting point. I want to clean up the steel, clean the grinds, and rehandle with some curly maple. The large chefs knife is a stubb tang that really needs a little more handle weight. I’m thinking about welding...
