I've been on a japanese style kick recently, and wanted to do some more work in this pattern... here are the results.
First up is a 9" gyuto.
The blade is made of my own laddered ws damascus, consisting of 15n20 and CruForgeV steels.
The handle is flame walnut and has an octagonal wa shape, with a slim feel and light taper. The ends of the handle are mortised and fit into the bolsters, and the bolsters are made from 410 stainless steel, hammer-textured, and heat-colored to suit the darkness of the blade and handle.
Specs are as follows:
Overall length: 14-3/16
Cutting edge length: 9-3/8
Handle length: 4-3/4
Spine thickness at bolster: .100
Edge thickness before sharpening: .010
Total weight: Just over 6-1/4 oz.
Blade width at heel: 2-1/16

Next up, is a santoku.
The blade is forged from more laddered ws Damascus, and has a lighter contrasting finish- Im playing with the finishes on some of my kitchen stuff to see what I like better for use.
The handle is an octagonal wa style, with the African blackwood main section mortised deeply into the ivory paper micarta bolster. A stainless spacer sits between for just a touch of dress to the otherwise restrained materials.
This is quite a thin, light blade- indeed the whole knife is. The balance is nice for cutting from a pinch grip in particular, and the edge curve is mild yet continuous, increasing toward the tip.
Specs are as follows.
Blade length from tip to heel: 7-3/4.
Overall knife length: 12-3/4.
Handle length: 4-3/8.
Spine thickness at plunge cut: .090
Edge thickness before sharpening: .008
Total weight: 5-3/4 oz.
