I don't normally get excited about kitchen cutlery, but this is an exception. I was excited to find and aquire this carving knife. I believe that it's from one of the earlier sets before they changed to the maroon micarta. Pictured with it is the little 107 Scout and I think they make a nice looking "Father and Son" set. :)

Not what I figgered this thread would be about, but cool none the less. Knice nives as always Dave:thumbup:

Great Score! I've got the Empress Trio in burgundy micarta and use them quite often. After seeing yours I'm thinking I need another set in that color.

The carver is certainly from the Empress Trio set md. 200. Not sure how early. Yet, the maroon micarta handle model you mention was from 1973. DM

I use my set as well. The carver excells as a fruit knife, carver and boning as does the 6"only not as strong with handeling large fruit. The 4" paring knife peels potatos well and cuts up whole fryers with ease. I've even used it to trim large brisket and field dress deer. DM

That is one handsome set.I wonder how the big one would be at cutting steaks from a strip of beef.Last night I cut 20 steaks from a 20 something pound hunk of beef and the last 5 were slow going.
