A good caping blade for big game

What do you think would be a good style of blade for caping deer and elk heads? This can be very delicate work, i need something that is easy to handle stays sharp and touches up easly any ideas.
 
The Bark River Mini-Canadian makes a great little caping knife and the A-2 steel (convex edge) takes an outstanding edge and holds it extremely well.

The best thing I've found for caping out game heads is a scalpel. You can get them from taxidermy suppliers.

A Mikro-Canadian from Bark River is also a good choice. Both Mini and Mikro are great skinners, especially for delicate applications like caping.
 
I was gonna mention scalpels too.
Another handy knife is the Kershaw Black Horse II folder.

I'll THIRD the BR Mini or Micro. Both are exellent knives. Great steel (A2) and great shape for caping.
 
Outdoor edge has a folding caper model, with G10 handles and a AUS 8 blade. I have not used mine outdoors yet but it worked well in the warehouse that I work in when I was putting it through its paces. A folder is not for everybody but you might want to check it out.

For a true caping knife, the Micro is, IMO, a little better. I actually dressed my deer with a Mini this year. :)
 
Another great choice is the BM 210 in CPM S30V or the newer D2 variety; the Spyderco Calypso is another good one (specifically in ZDP 189 if you can find one).
