I usually don't go with my wife when she hits the garage sales, but this morning, I did. First stop, I found this little Centofante 3, and got it for a quarter. The lady said her husband was selling off all his junk. Guess she thought this was part of the junk, because it's made in Seki City Japan. :eek:
It's been used, but is still in pretty good shape. Tomorrow, I'll clean it up, and put an edge back on the VG10 blade.

Great score. I still think the Cento 3 is the sharpest blade in my collection. It took some work on the Edge Pro but the potential is there.
 
Barman, after dinner tonight, I broke out my EdgePro Apex. With little effort, using a 400, 600, 1000 grit set of stones, the knife will push cut a grocery store receipt. Boy that VG10 takes an edge. :eek:
I cleaned the blade up with a good application of Wenol and a soft cloth. The handle got warm, soapy water. Looks almost brand new now.

I did the same but finished with a 1500 grit and the blue polish tape. Pretty sure I took it down to 15 DPS.
I thought I had a better picture of the polished edge but this is all I can find right now. I've got 2 Cento 4's that I want to sharpen the same way. I wonder if they'll sharpen as well as the 3's?
