I have not made many kitchen knives lately as I am focused on folders now but here is a pair I finished last week. Both knives came from the same san mai steel bar but while thé nakiri has a stabilized bog oak handle with a détail in monkey ear, thé Santoku has a stabilized curly mango handle with jacarandá da Bahia detail.
