A pair of fancy chefs.

I've been enjoying making pairs of knives together...
Here's two 8" French style chefs.

They are quite similar, with just a few little differences here and there in profile, and of course different woods.
Both have ladder pattern blades, .080" at the spine.
Both have integral bolsters of "rose roll" damascus.
Both have subtle centerline grinds to aid in food release, as well as convexity in the lower third of the bevel.
Both have been ground and hand sanded to a zero edge before etching and sharpening.
Each weighs 7-3/4 oz.

The black handle is african blackwood with a streak of sapwood left on for style.
The red handle is some dynamite old stock cocobolo I got recently.

I like them both but real partial to that black handled one, probably due to the sap wood but aint hatin on either one of em.

Wow those are nice. Love them both, blades and handles, but that blackwood with the sapwood is really cool!
 
Inspiring work! Something about the Blackwood handled knife pops more for me, I think maybe the rose roll came out with more contrast? And the blade is just perfect.
