I thought that " Sabatier " was a brand name made by one company . Apparently there are quite a few companies with at least one company so propietary as to denounce some of the others .

I picked up what they call a slicer which looks a little like a carving knife to me .
I paid a dollar for it at a local sale so if it turns out to be a less than stellar performer it can serve other purposes with no loss . The Name on the knife is
" Veritable Sabatier " with " inox-France " In line with it . I doubt if it is at the high end of this copyright conumdrum . It seems a simpler made knife than some of the other companies offerings . Is there anyone who can shed a little light on

Sabatier trade marks have been used by many French manufacturers.

The name is a traditional French one pre patents.

Its obligatory for there to be a second mark to actualy identify the maker.

Look for one machined from a solid bar{integral bolster.} not ground sheet steel ones.

Unfortunately my friend I think I have one of the lesser quality ones .

" Veritable Sabatier "Veritable being some sort of version of "Truthfully" L:O:L

It is still a well finished knife and will compliment my arsenal of kitchen cutlery . I can,t go wrong for a dollar .

Add Thiers Issard to that list - they made mine.

Many Sabatier knives also have an Elephant as a trademark, and any number of stars. Yours?
 
I seem to rcall that there was a legal dustup some years ago, and the ruling was that any number of cos. could use the "Sabatier" label." You are left with using the usual tools for deciding if the knife is any good. The cheap ones are relatively soft.

If it is marked as imported by Abecrombe and Fitch it's a good-quality and fairly veteran item as the real A&F (high-end department store, not the current sodt-core porn stores) went under some years ago.

Those marked "BonGourmet" also seem uniformly good.

I've seen those marked with the elephant and four stars that were good, then saw one a month ago that was very bad. ?????????

Amazing how good "kitchen" knives can be had for a Buck at estate and house sales. The ladies running them seem knowledge-challenged when it comes to anything toollike. I carry a small sharpener to such sales to test the hardness of the blades.

No I meant ruse as in trick . I,m not crying as its still a good knife . No trademarks or identification other than the "Veritable Sabatier inox-France"
I haven,t sharpened it up yet but the metal looks decent . Worse case scenario I,ll take an inch or two off to make a small game broadhead and the rest will become a good tomato slicer . I will retire my fileting knife to fishier encounters .
 
Mr. smiley faces notwithstanding . I appreciate the effort put out by people who know more about a particular brand . Notwithstanding the fact that Sabatier is not really a brand .

The blade just barely passed my first test which is if it will become shaving sharp from just an application of a fine ceramic stone . It is just on the cusp of this . It has the ability to hack down a few forearm sentries much to the chagrin of my skin . This is proabably as much of a testament to the knifes original condition as it is a test of the metal .

I will give it its final test tonite which will be a few passes on the " Wheel of Chance" I call my motorised stone this because there is a chance it will work .Seriously this motor is so weak its practically impossible to burn a blade on it . After that I will give it a few licks on the fine ceramic again .

Its actually part of a law up here so that politicians can backwater over just about what suits them .)

BTW, inox is an abbreviation of inoxidable, which means "stainless" (see also Victor+inox, makers of SAKs). Without meaning to hijack the thread into the eternal "which-is-better:-carbon-steel-or-stainless" debate, lots of kitchen pros prefer the older carbon steel Sabatiers. As this pic of a ++++Elephant Sabatier and HI YCS shows, both are great users but neither is inoxidable:D
 
Thanks I read french though so I was up on it . I like carbon for work knives . I prefer stainless for the kitchen .
 
Indeed. My Troop goes to Canada twice every three years. Several times, kids have commented on reentering the U.S. about the relative lack of trash all over the landscape in Canada vs. what they are now noticing for the first time as they cross the Peace Bridge. We ask them to discuss why that is, and they have always concluded -- all on their own, that in Canada far fewer people think gravity is an accepted method of trash disposal. The why of that remains a mystery to them.

(My better half also prefers the carbon versions - even in the kitchen, her favorite being a particularly thin and springy one that she uses every day.)
 
You know, I think Canada may be 'cleaner' than many American cities. I'm not sure. On the other hand, a high school girlfriend married a Canadian many years ago.
"He throws his beer can out the truck and complains about how dirty America is," she told me. "They're just as bad."

I remember Vancouver as a very tidy place, though. I guess it really depends upon which section of America you are using for comparison.

Nail on the head as usual . Saying Canada is less populated than the States is an understatement . I think overcrowding , poverty , hopelessness leads to such problems . Montreal is a pretty clean city . Toronto is supposedly cleaner and as has been said Vancouver is great .

Focussing on a drunk as an example of slovenliness ? A drunk is a drunk no matter where you are .

I have made literally hundreds and hundreds of trips to small town U:S:A .
I had my own personal team of border guards with one who is [proabably still nonplussed .

I visited mostly with country folk and hunters from small towns . Clean ? There is no garbage . Good people ? The best . Give you the shirt off their back and appreciate it when the favor is returned . Very little nonsense about them . Good looking people .
