A traditional knife without brass liners?

Check out some of the GEC lineup. They do a few series with steel liners (and bolsters). The 68 Pony Jack is a really cool one and the 15 series are really popular.
 
Buck 30x series. My GEC Pony Jack and Boy's Jack. Any GEC knife with a pattern number ending in STL.
 
Off the top of my head....Some Case knives from the "Select" series... Some of the recent GEC 38 patterns that were SFO had steel liners like the American Whittler, Orchard Gem Farmer Jack, and Lick Creek Farmer Jack... current Swiss army knives... many of the knives made by Canal Street Cutlery... Some of the Buck 301 stock knives like the one with black dymondwood handles.
 
Buck 300s are all stainless liners.

Some Queen knives and some GEC are nickel-silver liners, if that counts as it's brass in disguise I think-still preferable though.

French knives such as Chambriard and Fontenille-Pataud are all stainless construction, many other French knives too.
