About 6 weeks ago I started sharpening my neibors knives for knife money. I live in a highrise apartment building so the amount of money this brought in was surprising. This moring I had a gentleman call me about sharpening a handmade chefs knife be bought in Japan. When he dropped it off I was immediatly surprised. I know ZERO about kitchen cutlery but this knife amazed me. the blade was a very tight patterned damascus and the handles a very dark reddish wood. while beautiful and very well made with great craftsmanship the edge had been pretty beat up. I figured I'd try a new strop idea I had so I went to sharpening.
My sharpening system consists of.
150 grit EZ Lap diamond hone for destroyed edges
220/1000/4000/8000grit Norton waterstones
Leather Strop .50 micron paste
After Puting a mirror poslished edge on it I went to the leather strop with .50 micron paste. It came out beautifly but had no bite to the edge. I tried a new Strop idea i've been toying with. I had made a SILK strop out of 10 layers of 25inch by 3 inch wide silk sewn together at the ends and loaded with 1 micron paste. After 2 minutes on the silk stop it produced an edge like I'd never seen. it was mirror like but somewhat toothy and sliced like a demon. I went to the kitched and was able to shave the skin off a tomato!! No more leather strop for me! I'm stickin' with silk.
