Acid etching help

I will be removing the Teflon coating from my M07 and want to do some kind of acid etched finish when Im done. I see people using mustard, apple cider vinegar, and citrus. Do each of these methods show a different patina, i.e. color? Is one darker than the other or is it determined by time left on the blade? Does one type give better protection than the other?
This will be going on an 80CRV2 blade.
