I am in the General forum so I'll play. 
An old favorite, John Fitch JS hunter.
Very reasonably priced when Big John was a JS.
1084 steel and Desert Ironwood. Kenny Rowe sheath.
A DH3, Don Hanson III MS hunter in Missouri Walnut, bronze guard/pin and W2 steel.
Which I want to try out on game and will likely replace the Fitch when I have a nice sheath made for it.

Scheppmann Hunter. A great working knife from a great guy to deal with
Lon Humphrey pig sticker for when hunting hogs with dogs and and a knife only
Lon is a great guy to deal with.

While not my favorite, this young lady in Rincon, PR, swears by her slightly upsized curvy, all purpose karambit which she calls the Hay Karamba, when it comes to wild boar hunting......

I am working on making my own hunting knife at the moment, so right now at least for humor and a little seriousness to how well a folder works here is mine.

My absolute favorite that has dressed more deer than I can count is my Busse AD.
But the one that got carried this year that I was looking forward to, but did not have a chance to try out, was my BRKT STS-4.
