ADDENDUM to post about reprofiling

I forgot to let you gentlemen know that I have a knife {a cat knife} made in Germany, maybe some of you know which i speak of. It has a picture of a cat on both sides and is black. The blade is very thin on this knife and the Edgepro sharpens it up like a razor. I hone it at about 15% with no problem.
The blade on this knife is completely flat all the way to the tip.

Why am I having such a time with reprofileing the one with the spine. The cat knife had to be reprofiled also.

I can only imagine that the edge angle is steeper, less steep, or not properly hardened. Use the sharpy method to see if it is actually grinding the edge evenly, if it is, then it's probably a bad heat treat.
