Advantages of stripping off blade coating?

I've been thinking of getting a Mk1 USN Ka Bar recently as my go-to fixed blade for camping, hunting, and, God forbid it ever comes to these, survival and combat. For practical purposes, is there any benefit of stripping off the blade coating and replacing it with either a vinegar patina or maybe some sort of parkerizing? What are the advantages and disadvantages of each type of finish?
 
When you baton and do stuff that scrapes the blade coating, it slowly scrapes it off. So some people just like a uniform looking blade, a unique blade, or they like patinas.
 
The coating gives a bit of drag when slicing I find, and not really a fan of the tactical look. A good patina works fine for me, I just use it and let it darken. I have considered getting some cold blue and seeing what kinds of finishes I can get with it.
Rust resistance is at the very bottom of my list of features I look for in a knife.
 
Especially w/ the MkI Navy, I use it for food prep. The idea of a coating chippin' or slagin' off in my Jambalaya just isn't appealing.

It comes off easy and the vinegar patina is a snap. no rust so far. In fact, it sometimes actually chased a little rust out from under the guard and handle when I patina'em.
