Wifey and I need a new kitchen knife and we've been eyeing the Bark River Santoku:

Does anyone have one, and if so, how do you like/dislike it?

What are the pros and cons of an everyday kitchen knife in S35VN?

Is it worth the price, or are we better off with a less expensive Japanese import (Kanetsune, etc)?

Both her and I prefer using the santoku design over the western style chef's knife.

Cheers!

I have one and it rocks.
I don't have much experience with higher end kitchen cutlery....so don't have much of a frame of reference to compare it to, but the performance is awesome.
I am not surprised by the lack of responses. Not many of these were made and not all have been sold.

DLT Trading and Knives Ship Free seem to have a number of these in stock, so am deciding between the olive wood handle or one of the micarta ones. I think G10 may be a bit slick for kitchen work, as my BR Golok with G10 handles has a tendency to shift in my hand a little when chopping.

At the moment I'm using a Bark River Mountain Man (carbon) in the kitchen, while my wife likes the Bark River Bird and Trout (12C27 Stainless). Both are amazing slicers so I imagine the BR Santoku would be as well.

This would be my first experience with S35VN stainless steel, and It would be interesting to see how it performs with everyday use and if it'll hold an edge well.

Now to justify the cost with the missus.
