Could someone please offer up a suggestion to turn a mirror polished, stainless steel, blade into more of a satin finish? I like the Case "As ground" finish better than the highly polished look. The polished ones just seem to show fingerprints and smudges so bad. Is it light sanding that would be my best option? 600 grit? Steel wool? I guess some handle materials look better with a mirror polish, but some more rustic scales I think would benefit from a toned down finish. Has anyone done this that can provide any pictures? Thanks in advance.

Yea I would start with a high ish grit sandpaper maybe 1000 or 800. Remember, it is easier to go back down in grit... Much more difficult to remove the deeper scratches of lower grit to go up.
 
A Scotch-Brite pad is very mild for getting a satin look. It won't cut deep and you can follow up with some 000 steel wool.
Just remember, the more time you put into it, the better it will look.
