Advice on a gift for my Dad

My Dad loves cooking, but it is of no surprise that he doesn't really have a high-end kitchen knife. As I am into both cooking and knives, my last few birthday and Christmas gifts have been kitchen knives. My Dad has bought me some Shuns, and I was thinking of returning the favor for his Birthday.

I'm wanting to get him a knife a bit better than a Shun. Specifically, I'm looking at the Al Mar Ultra Chef 7 inch santoku. I'm sure he'd take care of the knife, because anytime I visit I bring my knives and let him use them. However, I don't want to worry my Dad with the extra care needed for carbon steels, so I want to stick with VG-10 or the like.

Any other recommendations around the 115-150 dollar range that would fit what I'm looking for?
 
I took a look at some of the Victorinox kitchen cutlery. They certainly look to be very utilitarian, similar to the Wüsthoffs and Henckels around the same price point. Shuns are about twice as expensive, and the Al Mar is about 2.5 times as expensive. I'm not exactly sure what kind of steel the Vic's are made out of though.

On a side note, I think I should mention that my Dad goes to Germany a lot so he has picked up several Henckel knives. I'm looking for something that will give him a feeling of "wow" when he is cutting things compared to what he has now. Though I sharpen his knives whenever I get the chance, for non-knife people most of the time just how something looks makes them think it is sharp.

i have a nice 4" bladed Global that serves me very well. nice and easy to keep stupid sharp.

i'm currently considering either an Al Mar or a Fallkniven Santuko as my next kitchen blade.
