Recommendation? Advice on finishing M2 / etching HSS / carbide banding

Hi guys, here the slicer blade I am working on. Currently on 120, planning to go up to 400 and then finish the flats and do final profile on the spine and tip. I remember that M2 take acid etch and cold bluing so good.

As I don't plan to hand sand on this blade, it's either 400 grit with felt and heavy cut compound on a cork belt or acid/mustard etch. I actually wanted to try one of those bubble wrap/drinking straw drawing with mustard, but not sure if the M2 will take it really good.

What about cold parkerizing with phosphoric acid as shown by Natlek?

Quick etch on 120 shows what I believe to be strong carbide banding in the steel.
