Hello, this chef knife is fresh of the bench it's a stainless steel AEB-L k tip gyuto with a stabilized bog oak for the handle with a black g10 and ivory micarta spacer. The blade was ground to 0.3mm (0.0118) and hand sanded to 1200grit and buffed. The blade is at about 59-60 hrc.

Beautiful work, great for a traveling chef. Nice choice in steel, AEB-l seems to be the choice in stainless that holds a great edge.
 
I really like how you used the leather sheath vs. the traditional wooden saya. It really works here. Gives the package an almost a rustic look paired with the color choice of the handle.
 
Received it today. It's even better than in pictures. The feeling in hand is phenomenal : exactly the balance I like ! The Wa handle is a treat, of course. One of the best handle shapes ever, IMO. The bog oak handle (very rare) is the icing on the cake, pleasure of the eyes, pleasure of the hand, exclusive... And I love the mirror polished blade ! That's so easy to keep clean in the kitchen. And as it comes with a very handy and effective sheath, it will travel !
