I personally think it is a great steel for the kitchen environment. AEB-L is highly stain resistant and is actually designed as a razor blade steel. It has a super fine grain structure which means it takes a ultra sharp high polished edge that is ideal for push cuts.
 
Thanks. How hard is it to put that ultra-sharp edge on there, and does it last long with typical kitchen work?
 
AEB-L sharpens up easily and holds a great edge for typical kitchen work.
