I owned knives for years but have never had a good sharpener. Could y'all please give me some advice on sharpeners. I don't want to spend more than $25. Any help is appreciated.

Try the Lansky box (can't remember what it's called) with the 4 ceramic rods (2 medium and 2 fine) and pre aligned angles (30 and 40). Cheap (around $20) and easy to use. Sort of a poor mans Spyderco Sharpmaker

one more for the "lansky box" as muddog49.
i don't know about the spyderco sharpener, but this lansky can easily make your edge razor sharp , really "razor sharp" ... and it's cheap, ...

It works on the same principle. Rods at preset angles. You hold the knife at 90 degrees vertically as opposed to 20 degrees horizontally (or whatever angle you're using), so I'm assuming it'll work just as well depending on the rods.

If you are looking for cheaper, say 5-10$ just practice free hand with a Lansky diamond rod!

How do you know if you're supposed to use the 30 or 40 degree setting on the sharpmaker? I want to know for future reference when my Caly 3 gets dull.

I believe that on the DVD Sal says Spydercos come with a 30 degree (15 each side) angle from the factory.

Lansky and Spyderco have good sharpeners.

On the cheap, look up Chef's Choice. You'll find something very similar, which you can use with both kitchen and other production knives. If you want to sharpen a very expensive or custom knife, just remove the "guide" system (even though it's plastic and probably would not mar the blade finish, anyway). The rods have "coarse" and "fine" sides. My wife has one of these in the kitchen and I've used it with a number of my knives, when I didn't want to break out sharpening stones and oil...

DMT diamond cards are only $12 or less and are real high quality. Even better--they fit in your wallet!
