After the Best All-Round Boning Knife, Ideas?

Working on my families farm, food and cooking are a big part of our lives and something we spend a lot of time doing. Up until now, I've not really got involved in the butchery side of things, that's been my older brother, father's and grandfather's domain. Now my grandfather isn't able to work on the farm, I need to step up a bit. The main things we'll be butchering are poultry. i also want to improve my skills at boning fish as I'm an avid fisherman in my spare time and eat a lot of fish but usually cheat by getting it pre-filleted. So bearing in mind that I could be working with various types of meat and fish, I need a good all-round boning knife that can handle the different tasks. From what I can tell after reading up on the different types available, I'd probably be looking for a strong but flexible blade that can handle both poultry & fish. It would appear that the harder and firmer blades are more geared towards red meats that require more force to be exerted. So, looking around and already owning a Victorinox kitchen knife, the Victorinox 47513 Flex boning knife has taken my eye. Its under $50 and seems to tick the boxes. I've been reading reviews on a website that sells [COLOR="#3222222"]home & garden[/COLOR] items & users seem to be very happy with it. Can anyone suggest a better all-rounder before I decide to go for the purchase? Thanks.

I'm sorry your first post has languished so long.

I'm no expert, but I don't think you can go far wrong with a Victorinox, and I don't think the flex will be too whippy for poultry.

You might try this question in the general subforum, which moves a little more quickly.

Vic makes boning knives in a few dozen different shapes and sizes. I'm sure something in that line will work for you. I used to use a 5-inch curved, flex Vic boning but have now switched to the classic Japanese pattern of poultry boning knife.
 
Thanks for the heads-up, appreciate the replies. I think i'll definitely be going for a Victornix then, I just need to pick the right one. I'll check out those that Sidehill has used.
