Not sure what material you are looking at when you mention aging.

The traditional way to remove stress from large castings was to age them by placing outside year around in hot and cold. Its' still done for castings too big for a heat treat oven.

There is slow conversion back to carbides over time with metals containing carbide forming elements, after the initial cooling has ended. Given enough time, maybe all.
