Al Mar Chef Knives Question

I've gotten sick and tired of the Dexter-Russell house knives everyone uses at work and have been looking around for a high-quality chef knife. I've used the Al-Mar shape before (looks to be the same as the Masashiro our sous-chef uses) and found it to be perfect but the companies that make that style usually only produce chisel-ground blades, which won't work very well for me since i'm left handed. Does anyone know if the Al Mar Chef's knives are chisel ground or not?

Good question. I would also like to know. I am considering getting one of these, but my wife is left handed. I need to get knives that will work for both of us.
 
I have the 8 inch chef knife and it's symmetrically ground - not chisel. Awesome knife, I love it. The blade is extremely thin and takes/keeps a wickedly sharp edge. That adds up to a great slicer.
 
Al Mar kitchen knives, like most Japanese Western style knives are double bevel. The only negative thing I can say about the Al Mars is that the chef knives are too short for me. If they are long enough for you then I can tell you they are excellent. The warikomi construction with the VG-10 in the core makes a fine blade. I do have the parer and it is my favorite paring knife. Good cooking.
 
Got the reply from Al Mar this morning. Heres the orginal message and then their reply:

I have a question about your kitchen knives. Im left handed and as such a chisel grind does not generally work for me. Can you tell me the grind(s) availible in your various kitchen knives. Its much apperciated.



Our knives are not chisel ground and are completely ambidextrous.
They are flat ground.

I must say they are concise and to the point. Hope this answers your question if no one else did.
 
thanks for the answer. i ended up ordering the knife on monday from NGK and received it today. i'm off work this week so i have only used it to slice some kumquats and a tomato but it is shaving-sharp and balanced perfectly. so far it looks like a great knife.
