I have a regular Sere 2000 that I've had as my EDC for a while. I love it, it's my favoutire knife. I'm a lefty and carry the Sere 2000 in my left pocket with the clip reversed. I'm debating the purchse of the Vallotton conversion. My question is to anyone who has onwned/handled the Vallotton scale release conversion - how easy would it be to operate with the left hand? That would require moving the scale back with the index finger of the left hand, as opposed to the thumb - is it possible? Or would it require feats of finger acrobatics and contortion? Thanks for your time and help.

I have the Vallotton conversion. I have several converted by Vallotton, and I think the AlMar SERE 2000 is the BEST! I really love that knife, and it is a sweet job by Mr. Vallotton.
Now to answer your question. I would find it difficult to operate left handed.
It is obviously not a push button, and it is not a bolster release. It is a scale release, and I think that is where the difficulty is. In a bolster release, you can still hold on to two thirds of the knife, with a scale release, you really won't be able to grip the knife, and twist the scale with your index finger.
I can do it with a bolster activated release such as my LCC.
Hey, you never know, after all you are the lefty, for me it is not natural.
