The Al Mar Ultra Chef series is one of Al Mar's three cooking series. Compared to Al Mar offerings it is the middle of the line offering:
Stainless Ultra-Chef Gyuto ($320)

The Stainless compared to the standard Ultra-Chef replaces the wood handle with stainless steel, making it an all stainless design. Both Ultra-Chef lines use a VG10 core at 60-62 HC, sandwiched between 16 beautiful layers of stainless steel. The standard Gyuto uses a VG2 blade sandwiched between 400 series stainless steel. The blade is eight inches long and it's shape is identical between all three version.
I chose the Ultra-Chef for its beutiful cocobolo handles combined with the gorgeous san-mai blade.
The knife weighs in at 189 grams and is a pure joy to handle. The balance point is right at the start of the cutting edge. The handle is very ergonomic to me. While using it to prepare dinner today I felt no hot spots or fatigue from using the knife. I rarely felt the need to choke up on the blade, and when I did it was very comfortable. To finish here is a picture of some cut up green onions.
