I have an excellent condition Al Mar Ultra Chef series large chef kitchen knife with cocobolo handle scales, stainless steel forge welded bolsters and an 8 1/2" (215 mm) damascus-clad VG-10 blade for sale. The VG-10 core of the blade is hardened up to RC 60-62 for great edge holding, and the 16-layer damascus cladding is softer and adds strength to the blade. The blade is ground thin to allow maximum cutting ability.
The chef knife listed here has been used lightly and resharpened once, and the current edge on it is scary sharp, significantly more so than the factory edge was. There are some fine scratches on the blade near the edge from the sharpening, but overall, the knife is in great condition. The original box is included.
