Al Mar ultra versus Shun?

Looking at an 8" chef's knife. I'm considering the Al Mar Ultra or the Shun Premier. How do they compare?
 
Can't compare, but I have about 7 Al Mar knives,
some going back to 1990, and I love that stuff.
It is traditional French in style, and I believe the Ultra uses G-10
with a Rc hardness of around 61 in its core.
 
The Al Mar VG-10 blade is rumored to be from Hattori and the Hattori VG-10 supposedly performs and behaves better than most VG-10s.

The Shun Premier is essentially a Shun Classic with a Tsuchime cladding. It’s a pretty knife, but (if the Premier cladding is as easily scratched as Classic), it maybe difficult to keep looking nice. I’ve used and maintained several Shun classic chefs’ knife and don’t care for it.
