Thanks! The right half of the logo does look like a very archaic variation of the kanji for horse... but I'm still at a loss about the rest of it. The bottom left might be mori, for forest?
The Al Mar logo is the personal name stamp of the late founder of Al Mar Knives.
Read from right to left and up and down, the three Chinese characters or Kanji reads as "Ma" (uma) (horse) "Guo" (kuni) (country) "Sen" (mori) (forest). "Ma" being the family name and "Guo" "Sen" the first name. Hope this helps.
