Hey ya'll, Just wondering if anyone else has noticed this or not. I had bought some Aldo's 1084 1/8 inch x 1.5 inches and I've also bought some 1080 from Jantz in 1/8 inch and also some 01 from amazon at 1/8 inch. Aldo's steel appears to be a hair thicker then all the others even some mild steel I bought from Lowe's at 1/8 inch is even thinner then Aldo's. So my question does he run his steel a bit thicker or maybe by chance I was shipped some 5/32 steel? I actually like the bit more thickness but before I buy more wanted to see if maybe it was just my order or what not.

NJSB isn't a steel mill. He is buying the thicknesses that are available from the source mill, and for purposes of describing the product, he is rounding down the thickness to the nearest fractional inch size. Oversized thickness are the rule, rather than the exception, in the world of stainless and specialty plate and strip.

When I ask for a list of available 80CrV2 stock from the same German mill that Aldo buys from, I get a list of thicknesses that exactly match the thicknesses offered by Aldo or AKS. So the evidence before me indicates that these are not custom roll jobs. Obviously I'm not looking at every single grade and thickness; this is a limited observation.

Either way, the point I'm making - that directly addresses OP's question - is as follows. The only steel products that come in precise thicknesses off the steel mill are sheet and bar. (It is important to note that a bar and a rectangle cut from parent material are two different things). This describes the products OP has bought from Jantz and Lowes - they are either bars or rectangles cut from sheet. Aldo's products are rectangles cut from plate or hot-rolled strip - one does not have the option of buying these in a precise thickness from the mill. If, for example, Aldo could get stock that measured 0.188" ±0.002" - a standard sheet or bar tolerance, he would.

Similarly, if I ask Carpenter to roll me 1/4" strip, they will offer me something in the 0.265" to 0.285" range. If I had the option of getting it at a tighter thickness tolerance, I would.
 
And very likely the 1/8" strip at Lowe's is not one eighth of an inch, it's probably 11 gauge and that would be closer to .120
