Nice pictures and collection. I'm torn between trading up my custom AMS for a Muk or Pork Shank for deer season. Seeing these all together is really helpful.

That small steak knife would be an ideal bird/trout knife. Are they available at any time or are they only offered in runs like other Busse models?
