Not that I've been buying khuks as investments; but I'm curious how alterations such as reshaping or replacing the handle or bluing the blade effects the value.

Very simple:
You like the alteration = increased value:D;)

+1

This last year I've come to a realization.. If I buy a knife I intend to use it, period...

If it harms the value a little because its now used, so be it.. I'll have fun in the meanwhile using it, if you buy quality value is hardly ever an issue as quality knives always hold their value (unless they're damaged)..

Now will you get your money back after you alter it?? depends on what you spend altering it..

Depending on your alterations it may just be harder to resale I guess, to the purists..

Blade patinas coatings etc except for removing forge scale can be undone. Sanded or sandblasted and re-polished done back to original.
Handle adjustments not so much, smoothing the horn of the pommel to keep it from biting you probably not going to affect resale so much. A complete re-handle or major reshaping to fit your hand might drop the value unless its a face to face sale and the buyer likes the changes. The one here that was redone in G10 would increase the value if that's what you are looking for or render it valueless or unappealing if you are a traditionalist.
