Alton Brown, Good Eats, Peaches, Knife ?

ok, i know there are some die-hard GOod Eats fans here who like to see who uses what ... and i know that Alton is a regular user of folding knives on good eats. i saw the Peach episode today and he cut open several using a black coated bladed folder. looked kinda like a Benchmade 802 series, but i know it wasn't. and yes, i know he likes Kershaw and Spyderco. looked like neither to me. anyone get a good look at it?
 
Ask that chinese girl on the show, she knows a whole lot more than Alton !!!
 
I saw him use a one hand folder on one of the episodes of "Feasting on Asphalt" or whatever it was called.

As an actual "degreed" Food Scientist, I can tell you that he knows much more about the scientific reason some things happen in food preparation, but not enough. Some of his "never do it this way", or "always do it this way" stuff is good for TV but I disagree with him on many things.

My wife did get me one of his T-shirts that says, "SCIENCE – It's What's For Dinner!"

The guy's almost worthy of hero status, knives, food, motorcycles, but I've never seen him harvest his own meat yet!
 
Wow-- others interested in knives *and* cooking. I guess I'm home. Yeah, Alton sure whipped out the mean-looking tactical for that peach show. I've seen it or other knives several times on the show. Though it's kinda cool to see and I love Mr. Brown and his 'science of cooking' concept, knowing the nerd (and I use that term with great love) Alton tends to be, it comes off more showy than cool. I mean, if yer gonna pull out a nice one-hander on a national TV show don't be so coy and make one suited to the job. You don't want or need a black-ops tac to slice peaches; it's absurd and will affect the flavor of the fruit (I've treid using military-style blades for food which don't really work unless you have no choice, like a soldier). Also; does anyone else find Alton's obsession with doing the most complex and ostentatious procedure to be quite annoying? I'm sureb his methods are right but the show should *help* people, not scare them from actually trying the recipes.
 
I like his show but Brown is just plain wrong on stuffing! STUFFING IS GOOD! I'm 41 years old and I've eaten 48 or more thanksgiving dinners in my lifetime and I have never been afflicted with food poisoning from thanksgiving dinner. And sure I've had a dry turkey that was stuffed, But I've had dry turkeys that weren't stuffed too.

I find this to be incorrect. I've never had a blade coating affect the flavor of my food (then again, I suppose black spraypaint might rub off in your diced onion.....).
 
I believe Alton revised his take on stuffing in a later episode. He also had something against adding a drop of oil to the water when boiling spagetti, but he also revised that. And, he cops to it when he revises one of his "always" or "never" kind of things, so I can appreciate that.

What does kill me is how he rales against "uni-taskers" (kitchen tools or appliances that can only be used for one thing). Then he will go and build some sort of elaborate smoker with terra cotta planters or something. I mean once you start using a non-kitchen item for food use its not as if you will go back to its original use.

But I still like the show and it is nice to know that he is a fellow knife knut.
 
Looked a little like a 707 or a 10200 in satin finish. He also had what looked like an Onion with black finish in another episode.

According to his website, it's a Kershaw Blur. It would make sense, as the kershaw Shun knives are one of the few items he actually promotes.
 
True, plus Im sure he likes the Ken Onion line of Kershaws for obvious reasons...LOL, Although I would love to see him cut leeks with a leek, or scallions with a scallion...is it just me? I am a big fan of the show, I thinks its a great show for kids, makes them think cooking is fun, and it can be! I always learn somethign new when I watch it, and I am a big fan of gaining knowledge even if its little tid bits...
