I gave my daughter a set of Tom Haslinger's kitchen knives for her wedding ( I am selling some for wedding gift packages) and gave her an Edgepro system to sharpen them with.

She is a big cooking fanatic with a well read blog....

Anyway, she sent me this link to a cooking forum discussion that I found informative. You might want to add it to your links on sharpening ;)
 
Thanks, a very good tutorial. I knew kitchen knives were ground thicker than they ought to be, but 50 degrees!
