" not well understood " ? No kidding ! They don't seem to know anything about pasta.
I can't speak for Larrin .But in a lifetime that I've made cooked and eaten pasta I find NO connection between my pasta and that of Montreal !

Add a tine of San Marzano tomatoes and some authentic parmigiano-reggiano to your nuclear pasta and close your eyes....How tough can it be after that?
