I am attempting to make my first homemade knives... Or at least my 1st successful knives (my 1st attempt resulted in me accidentally melting most of the knife during the heat treating process). One of them is a pearing knife & the other is a fillet knife. I have them both cut to shape & heat treated so now I have reached the step of thinning down their thickness & creating their bevel & edge. I was wondering if anyone had any advice on where I should start the bevel of the knives. The fillet knife is approximately 0.70" in height at the middle of the blade & the pearing knife is approximately 0.80" in the middle. Any tips or advice would be greatly appreciated.
