Any good salsa recipes?

Hey all,

Man I've grown weary of the supermarket salsa's (and their prices). You guys have any good recipes? I've googled several, but can't decide on any specific one. I would like to make a gallon or two of the stuff. I also enjoy a medium level of heat. Something besides Pace . . .

Hope you like Pineapple/Mango Salsa

1/2 Pineapple - (use fresh pineapple) Core removed- Diced into 1/4 cube
2 Mangos - diced on to 1/4 cubes
1 Red Onion - diced small
1 or 2 Jalapeno's - dices small, seeds removed
Cilantro chopped fine (use as much or little as you like)

Stir -Let chill for an hour in fridge - Enjoy!!!

I love this stuff on my skirt steaks.
And the best part, you get to use your blade of choice :)
 
I do a quick one-blender recipe using canned tomatoes. It's fast and easy, and my kids love it, as well as my wife, my neighbor, my co-workers and my extended family.

The problem is, I don't have a recipe. I jus throw a bunch of stuff in the blender and push the button.

Anyway, here's about how I do it.

This makes about a quart.

2 cans of diced tomatoes, drained,
1/2 medium onion (whichever kind is in the cupboard)
1-2 tsp minced garlic
2 Tbsp lemon juice (lime if you have it)
2 tsp white vinegar
fresh cilantro to taste (the more the better)
maybe some sliced sandwhich peppers
1 tsp salt
1-2 tsp cumin

If I want it hotter, I'll add a dash or two of Habanero hot sauce (don't know where it came from, but it's Hot!)
Or any other hot sauce you have handy.

It's different every time, but you can get a good feel for it after a few times. My wife likes to add a Tbsp of sugar, not me. I'll sometimes throw in a ripe red/yellow bell pepper, if it's around, or maybe some of those baby carrots. Occasionally I'll add some pineapple, or even a peach.

Have fun with it! Make it your own.
 
I throw 2 cups of serranos and 1/4 cup garlic in a food processor, finely chop up an onion & some cilantro, add a can of black beans, a cup of frozen corn, 1/2 cup or so vinegar and 1/2 teaspoon of cinnamon.
mix, put in jars and hot bath it for 20-30 minutes.
you may find this to be more than just "medium" - but it's tasty.
you can also substitute 1 large or 2 small peaches, a mango, or some chopped pineapple instead of corn for sweeter & milder salsa.
 
I don't like salsa that has a sweetness to it, so most store stuff is out. I also don't like onions after gong through chemo (odd side affect). Her is my go to recipe:

1 can of S&W stewed tomatoes (must be stewed)
2 large (4-6")Serranos for mild 4 for spicy but not real hot
10-12 Tomatillos
1 bunch Cilantro
4 cloves garlic
S&P
Blend and enjoy!

Man, I hear ya! I used to eat Pace and others before I met my Wife. She loves Mexican food so when we moved to TX, our hobby was trying out new Mexican restaurants just for their Salsa. Took a bite of Pace not long ago at a party and about gagged. It was the first time in nearly ten years that I'd ate it and it tasted like tomato paste with onion powder in it! YUK!

My Wife has a great recipe. When she get's home, I'll try to get her to type it up and post it here!
 
So far, this thead is full of not salsa, but pico de gallo. Pico de gallo is raw and chunky. It typically begins with diced tomatoes and onions and builds from there. Salsa is cooked and has a fairly "smooth" texture.
 
3 pounds of plum tomatoes
1 white onion
1 bunch of cilantro
2 limes
2–3 tomatillos
12–15 jalapeños
salt

Put on rubber gloves, stem and seed the jalapeños, then chop them up fine. Put them in a food processor with the lime juice, tomatillos and salt, and run it for a minute or two.

Rough chop the leafy end of the cilantro bunch and put it in the food processor. Rough chop the onion and a pound of tomatoes and put them in the food processor. Pulse the food processor: you don't want to purée this stuff, just chop it a little finer. Pour everything into a big bowl.

Rough chop the rest of the tomatoes and put them in the food processor. Pulse the food processor to chop them a little finer, then pour into the big bowl. Stir everything together and refrigerate.

Save some cilantro and give it to your parakeets!
