Anybody know of any good hiking trails in the Catskills with caves?

How big of a cave are you looking for? I've only been to the "lesser" Ice Caves in the Shawangunks, but the Greater Ice Caves in the 'gunks are supposed to be spectacular - they're in the Sam's Point Preserve. the trails are supposedly very difficult to follow. Here's a good website describing the paths...

The Lesser Ice Caves are pretty neat. There's a path through them with side rails, but there are a couple of places that you can hop over and do a little spelunking. It's a nice hike in general. Gorgeous view from Sam's Point and from the Shawangunk ridge at the exit from the caves, the ice caves, neat rock formations, and Verkeerderkill Falls. If a week or two, you can probably go blueberry picking (the place is lousy with them), and it's neat to go from hot sun, no shade down into the caves which might be in the 40's or 50's.
